Pre-Prohibition Style - Bourbon Whiskey

This bottle is craft distilling at its finest. You cannot produce this Bourbon in a factory. It is handcrafted using some of the same methods my ancestors Isaac and Leopold Hartfield used hundreds of years ago. We release 2-3 batches a year that are made up of 30-40 carefully selected barrels.

  • Mashbill: 62% Corn, 19% Rye, 19% Malted Barley

  • Proof: 100 Proof / 50% ABV

  • Tasting Notes: The Pre-Prohibition style delivers a complex, grain forward flavor profile. Sweet corn and stone fruit on the nose gives way to cinnamon on the palate. Malted Barley heavily influences the finish with notes of smoke and tobacco.

When we brought Bourbon Whiskey back to Bourbon County after 95 years, it was our intention to design a line of whiskeys that represented the spirit the way it was made before prohibition closed 26 distilleries in the county in 1920. We resurrected production techniques from ages past for the Pre-Prohibition line. This Bourbon Whiskey is made using -

  • High Malt Mashbill - We us 62% Corn, 19% Rye, 19% 2-Row Malted Barley. Before prohibition most distilleries used a higher percentage of 2-Row Malted Barley to assist in fermentation. At 19% the Malt becomes a distinct flavor contributor in the mash bill. Most modern Bourbons feature 4-8% 6-row malt, and supplement with synthetic enzymes.

  • Grain-Out Fermentation - in a similar method to the way Scotch Whiskey has been made for centuries, we remove the solid grain from the mash before we ferment. This produces softer congeners (flavors) in the mash before fermentation.

  • Single-Pass Distilling - using our batch still, each batch is distilled in a single-pass. This leaves a very rich, grain-forward flavor profile in the unaged spirit. We also distill each batch at barrel entry proof (117 proof). This allows us to go straight into the barrel with many of the delicate flavors from the grain intact.

  • Cooperage - We age this product in a mix of 5 and 30 gallon barrels for 1-2 years. Using smaller barrels produces a fully mature flavor-profile while not overriding the softer flavors from the grain.

All in this produces a lovely and unique grain-forward Bourbon with wild complexity in the flavor profile. It is an experience like no other!

Batch 69 - Sometimes things get weird. As we started pulling the barrels for batch 69 we noticed a big corn-forward note in many of the barrels. This batch came out different, and we don’t totally know why. Some love it, some leave it - for a unique release select ‘Batch 69’ in the drop down menu before adding to cart.
